A True North Seafood Laksa

Chef Martina has shared her favourite way to prepare King George whiting.

Stage 1 

10g turmeric grated

2 lemongrass sticks

20g ginger

4 garlic cloves

2 kaffir lime leaf

2 green chillies

3 peeled shallots

Blitz all the above into a fine paste

Saute above paste for approximately 10 minutes

Stage 2 

1 litre vegetable stock

2 litres coconut cream

200ml fish sauce

160g palm sugar

100ml lime juice

Add stage 2 to the paste and cook out for 1 hour

Add coconut cream

Stage 3

18 Scallops

18 Tiger prawns

480g fresh King George whiting, cut into six portions

Poach seafood in above Laksa soup until opaque

Serve with fresh red chilli, lime wedges and crushed peanuts. Serves 6.
